Gelatin or collagen powder is a product of animal origin, specifically from beef which is considered the best quality of gelatin. It belongs to the coagulants as we can use it in cooking and confectionery, to thicken watery mixtures such as creams and sauces while depending on the quantity that we will use can give us more "stable" mixtures, such as fruit jelly.
