Cruciferous vegetables have stronger anti-cancer properties than any other vegetable. In particular, cruciferous vegetables produce glycosinol. These sulfur compounds are the ones that give cruciferous vegetables their bitter taste. Researchers have found that these compounds, in rat laboratories, fight various forms of cancer. Studies in humans have shown mixed results, but in general, people who eat a wide variety of cruciferous vegetables have a reduced risk of breast, colon, prostate and lung cancer.

The horseradish sauce is made from grated horseradish root and vinegar is a popular seasoning in the UK and Poland. In the UK it is usually served with roast beef, often as part of a traditional Sunday roast, but it can be used in a number of other dishes as well, including sandwiches or salads. A variant of horseradish sauce, which in some cases, can replace vinegar with other products, such as lemon juice or citric acid (sour). Horseradish is also used as a main ingredient in soups.
